Hi Everyone. I am sure you noticed that we have been cooking Tofu for the last two weeks. I hope you have tried out some of the recipes on Tofu. You can do so much with Tofu since it takes on whatever flavour you want it to take. Here is one last one on Tofu again.
450g firm tofu
2 onions sliced in rings
1 Tbsp olive oil or water
65g/1/2 cup cashews
1 cup water
2-4 400g cans of tomatoes or use fresh
1 tsp. sea salt
1 -170 can mushroom’ drained or equivalent in fresh
1. Sauté onions and mushrooms in oil or water until tender
2. Blend cashews in I cup of water until creamy.
3. Add tomatoes and salt and blend to desired consistency
4. Combine onion and tomato mixtures and gently add and stir tofu cubes
5. Serve over rice or pasta
