Creamy Potato Soup
8-12 potato, diced
1 large onion ,diced
2 cloves garlic, minced
15ml salt
100g cashews (blended with small amount of water until creamy
Add sprinkle of dried parsley
Method
1. Cook potatoes and onions and garlic in approximately 2 liters of water until soft
2. Add salt and remove from heat.
3. Blend cashews with small amount of water and pour into potato mixture
3. Blend half of the soup mixture in blender until creamy and add back into the rest of soup.
4. Enjoy!
