RECIPE NO 7.
CHICK PEA CURRY
We are going to cook Chick pea Curry today.
The best way to get started is to soak chick pea for at least 4 hours. The longer you soak the better.
Cook until soft and tender.
500g dried chick pea( or 5-6 cans tinned )
4-5 medium onions diced
5 large cloves garlic, minced
1 ½ inches fresh ginger, peeled and minced
2 tbsp. olive oil
1 tsp turmeric
1 tsp cumin seeds
2 tsp ground coriander
1 tsp ground cumin
3x 400g cans of chopped tomatoes in juice or equivalent of fresh tomatoes
3 ½ tsp salts
1 bunch fresh coriander to garnish
1. Saute onions, garlic, and ginger in olive oil.
2. Add seasonings.
3. Add chopped tomatoes and chick peas to mixture and simmer to blend flavours.
5. Add 12 stems fresh coriander or more to garnish and increase flavour.
6. Serve over brown basmati irice,chipotles, wraps, or I Indian bread.
