Hi everyone, here is this week's recipe.

Caribbean Curry


1 large onion, chopped

1 green pepper, chopped

1Tbsp. olive oil

2 Tbsp. lime juice

450 box of firm tofu cubed

i can kidney beans, or black  beans drained and rinsed

1 large tomato, diced

1 tsp. cumin

1 tsp. ground coriander seed

1 tsp.turmeric

2 cloves garlic,crushed or chopped fine

1/2up fresh coriander, chopped ( optional)

2 tsp. salt or to taste


1. Saute onion garlic and green pepper in a little water

2. Add juice olive oil and tofu

3. Add seasonings ( except fresh coriander) and cook until tofu takes yellow color

4. Add beans and tomato and cook until thoroughly heated

5. Add fresh coriander and serve over brown rice.
